Nitrates and Nitrites:
Sodium nitrite plays a critical role in preventing bacterial growth and imparting the characteristic color of hot dogs. However, when exposed to high cooking temperatures, nitrites may form nitrosamines—chemical compounds that have been linked to an elevated risk of certain cancers.
Processed Meat Consumption:
The World Health Organization’s International Agency for Research on Cancer (IARC) has classified processed meat, including hot dogs, as carcinogenic to humans (Group 1), citing sufficient evidence that regular consumption increases the risk of colorectal cancer. Red meat, by contrast, was classified as probably carcinogenic to humans (Group 2A). These findings are based on extensive epidemiological studies and mechanistic evidence.
